In recent days, the lotus ponds beside the Convenience Bridge Village in Heping Town have been filled with the scene of a bountiful harvest. Lotus farmers dig fresh lotus roots out of the ponds, while two people on the bank divide the work and cooperate, sorting by size and specification, weighing, and loading them onto trucks, sending them to the county wholesale market as quickly as possible.

"We get up at 4 in the morning to dig, working in the dark! This is fresh produce, and if we don't start early it won't work. We reach the market around 11, and by the next morning they are basically all sold out," said Gao Feng, the person in charge of the lotus pond, while busy at work. This year the market is good, with the roots mainly sold to wholesale markets in Jiangsu, Zhejiang, and Shanghai.

Gao Feng did some calculations: "About 3,000 jin per mu, which can sell for around 6,000 yuan, roughly the same as previous years." This 60-mu lotus pond grows three high-quality varieties: Xin San Wu, E Lian No. 5, and E Lian No. 6. This year, the newly trial-planted E Lian No. 6 performed impressively - introduced from the Hubei Academy of Agricultural Sciences, its yield per mu is similar to traditional varieties, but its taste is softer, stickier, and sweeter, and it cooks tender easily, which exactly suits the preferences of consumers in Jiangsu, Zhejiang, and Shanghai, earning a very good market response.

The lotus root market period lasts from June each year to the end of the year. This ultra-long supply period of half a year continuously delivers fresh seasonal ingredients to surrounding markets, ensuring that citizens' dining tables never run out of good products. Each fresh lotus root not only enriches citizens' dining tables, but also fattens the wallets of lotus farmers, injecting a steady stream of momentum into rural revitalization.
